Today I’m sharing 4 recipes I always make when I want something delicious on the go, without any fuss. They’re quick, fresh, healthy, and best of all, suitable for everyone — with vegan, gluten-free and dairy-free options.

Ingredients:
1 medium zucchini, grated
2–3 eggs
Fresh chopped mint
Salt, pepper and a drizzle of olive oil
How to make them:
Grate the zucchini and squeeze out the excess moisture.
Mix it with the beaten eggs, mint, salt, and pepper.
Cook mini omelettes in a non-stick pan.
Let them cool down. They taste even better the next day!
Alternatives:
Vegan: use chickpea flour + water instead of eggs.
Gluten-free and dairy-free: already suitable.

Cold Wraps with Hummus and Crunchy Veggies
No oven, no stress
You’ll need:
Wraps (regular or gluten-free)
Hummus
Carrot, cucumber, pepper
Lettuce or rocket (arugula)

Steps:
Spread hummus on the wrap.
Add the veggies and your chosen protein.
Roll it up, cut in half, and wrap in paper.

Cold Pasta Salad with Pesto
Easy, tasty and no cutlery needed
Ingredients:
Cooked short pasta (like fusilli)
Pesto (homemade or store-bought)
Cherry tomatoes
Black olives
Feta or mozzarella cheese
How to prepare:
Mix everything in a large bowl.
Store in jars or individual containers.
Enjoy it chilled, sitting on the grass.
Alternatives:
Vegan: pesto without cheese + firm tofu.
Gluten-free: legume or rice pasta.
Dairy-free: skip the cheese or use a plant-based one.
No-Bake Oat and Banana Cookies

1 cup rolled oats
2 tablespoons desiccated coconut

Preparation:
Mash the banana and mix everything.
